Ingredients:

  • 2 cups whole wheat or all-purpose flour
  • ½ cup pure maple syrup (or brown rice syrup)
  • 2½ tsp baking powder
  • ½ tsp sea salt
  • 1 cup soy milk or other plant-based milk
  • ⅓ cup safflower or sunflower oil
  • 1 tsp pure vanilla extract

Directions:

Ingredients:

  • 1 tsp pure vanilla extract
  • 1 cup vegan dark chocolate chips

Directions:

  1. Preheat oven to 375°F. Grease your jumbo muffin pan generously with safflower or sunflower oil, or line with jumbo parchment liners.
  2. Whisk flour, cocoa, baking powder, baking soda, and salt together in a large bowl.
  3. In a separate bowl, whisk maple syrup, oat milk, oil, and vanilla until smooth. Pour into dry ingredients and stir until just combined.
  4. Fold in chocolate chips. Fill each jumbo cup ¾ full.
  5. Bake 26–30 minutes until a toothpick inserted in the center comes out with just a few moist crumbs. Cool 8 minutes before turning out.
